German Pork Chops

    1 lb sauerkraut, drained
    1/2 cup brown sugar
    4 pork chops, trimmed
    2 onions, sliced
    2 med Granny Smith Apples, sliced
    4 stalks celery, sliced
    3 cups beer
    1/2 tsp fennel seeds
    1/2 tsp cloves
    1/2 cup sherry

    Heat oven to 350F. Spread sauerkraut over bottom of 9- by 13-inch baking pan. Sprinkle with brown sugar then add pork chops in a single layer. Mix onions, apples and celery in a bowl. Spread over pork chops. Add beer. Combine fennel seeds, cinnamon and cloves in a bowl. Sprinkle over. Cover with foil.
    Bake 1 1/2 hours. Take off foil, pour sherry over.
    Cook, uncovered, 30 minutes.
