1/3 C OLIVE OIL
1 # PEELED & DEVEINED SHRIMP (26-30 #)RINSED
1/3 C DRY SHERRY OR WHITE WINE
2 T CHOPPED PARSLEY
1/2 TSP HOT CHILI FLAKES
USE A 10"-12" FRY PAN OVER MED-HI HEAT, STIR GARLIC IN OLIVE OIL JUST UNTIL IT TURNS GOLD, 2-3 MIN. ADD SHRIMP & UNTIL ALMOST COMPLETELY PINK. ABOUT 2 MINS.
ADD SHERRY, PARSLEY & CHILE FLAKES, STIR OFTEN UNTIL SHRIMP ARE BARELY OPAQUE BUT STILL MOIST LOOKING IN CENTER OF THICKEST PART (CUT TO TEST), ABOUT 2 MINS. ADD SALT TO TASTE. POUR OVER RICE OR NOODLES.
