Fresh tomato sauce

2 lbs. ripe tomatoes, cut in chunks (5 cups)
1 tub cherry size balls of mozzarella cheese, drained, or 1 pkg. (8oz.) part skim mozzarella
1 cup fresh basil leaves, cut in strips
3/4 cup pitted olives, cut in half (optional)
1/3 cup bottled balsamic vinaigrette
2 tsp. minced garlic
1/4 tsp. each salt and pepper
1 lb. penne or other tube shaped pasta
Drain pasta immediately after cooking and toss with the sauce. Serves 6
