Fresh Tomato Sauce

Makes about 2 Cups
4 cloves garlic, peeled and sliced
3 tablespoons olive oil
6 large tomatoes, peeled and chopped
˝ cup red wine
In a medium saucepan over low heat, sauté garlic in olive oil until tender, about five minutes. Add tomatoes and increase heat to medium high. Cook, stirring often, about 15 minutes or until sauce has thickened.
Reduce heat to low and add wine. Simmer, stirring occasionally, about 10 minutes or until slightly thickened. Serve immediately or pour into a glass or ceramic container and refrigerate until needed. Heat in microwave before serving.
