Four Egg Frittata

2 tbsp. Butter or margarine
1 cup Shredded zucchini
1 cup Diced ham
1 tbsp. Chopped onion
2 tbsp. Chopped green pepper
1 cup Cottage cheese
¼ tsp. Dried basil
¼ tsp. Rosemary
½ tsp. Salt
¼ tsp. White pepper
½ cup Mozzarella cheese, shredded
Preheat oven to 400 degrees. Melt butter in large, oven-proof skillet (Corningware works great) that has been sprayed with cooking spray. Saute onion, green pepper, zucchini, ham and tomato for 5 minutes. Add herbs, remove from heat, and set aside.
In blender or large bowl with wire whisk, beat together eggs, cottage cheese, and remaining dry seasonings. Pour mixture over vegetables and scatter Mozzarella over top. Place skillet in oven. Cook at 400o for 20 - 25 minutes or until eggs are set and cheese is bubbly. It is ready when a toothpick put into the center comes out clean and the fritatta is totally firm. If the top becomes too brown before it is completely set, reduce heat to 350 degrees. Cut into wedges to serve.
Add a medium red wine and salad for a great brunch.
