Florida Orange Kiss-me Cake

    This cake keeps a low-fat profile because an orange and raisins replace some of the
    fat in the cake. The flavor is especially intense because the fruit is ground.

    Prep time: 25 minutes
    Baking time: 35 to 40 minutes
    Degree of difficulty: easy

    1 3/4 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1/4 teaspoon nutmeg
    1/4 teaspoon mace
    2 tablespoons toasted wheat germ
    1 small juice orange, washed, cut into 8 wedges, seeds removed
    1 cup raisins
    1 cup sugar
    1/3 cup unsweetened applesauce
    1/4 cup vegetable oil
    1 large egg
    1 large egg white
    1 cup orange juice
    1/2 cup orange juice
    2 tablespoons sugar
    1/4 cup sugar
    1/4 cup finely chopped pecans
    1/2 teaspoon cinnamon

    1. Heat oven to 350 degrees. Coat 13x9-inch baking pan with vegetable cooking spray.

    2. Sift flour, baking soda, baking powder, salt, nutmeg and mace in medium bowl. Stir
    in wheat germ. In food processor or food grinder with coarse blade, pulse or grind orange
    with raisins until chopped fine (do not puree). Set both aside.

    3. Beat sugar, applesauce, oil, egg and egg white in mixer bowl until smooth. At low speed,
    beat in flour mixture alternately with orange juice, beginning and ending with dry ingredients.
    Stir in orange-raisin mixture. Pour into prepared pan. Bake 35 to 40 minutes, until toothpick
    inserted in center comes out clean.

    4. Prepare Glaze and Topping: Meanwhile, combine orange juice and sugar in saucepan.
    Heat, stirring, over low heat until sugar is dissolved. For topping, combine all ingredients in bowl.

    5. Poke top of hot cake all over with toothpick or skewer. Pour glaze evenly over cake, then
    sprinkle with topping. Cool on wire rack. Makes 16 servings.
