2 pita bread rounds -- 7" diameter
6 romaine lettuce leaves, shredded
1 large cucumber, cubed
4 tomatoes, cut into 1/2" cubes
8 scallions, chopped
4 T. finely chopped fresh italian parsley
1 T. finely chopeed fresh cilantro
2 cloves garlic, chrushed
1/2 c. extra-virgin olive oil
1/2c lemon juice
Preheat the oven to 350 degrees F. Split the bread in half through the center and bake on a cookie sheet for 8 minutes or until golden and crisp, turning halfway through. Break into pieces.
To make the dressing, whisk all the ingredients together in a bowl until well combined.
Place the bread and remaining salad ingredients in a serving bowl and toss to combine. Drizzle with the dressing and toss well. Season to taste with salt and freshly ground black pepper. Serve immediately.
Serve as an appetizer or to accompany a light meal.
