Deluxe Pastry Dough

    2 1/2 c. all purpose flour
    1 t. sugar
    1 t. salt
    1 c. cold unsalted butter, diced
    1/4 c. vegetable shortening
    8 to 9 T ice water

    1. In a large bowl, combine flour, sugar and salt. With a pastry cutter, cut the butter into the mixture until it is pea-size. Add shortening and cut it in until the mixture resembles coarse crumbs. Drizzle 6 T. of water over the dough and stir until mixture is evenly moistened. Press down the dough with the flat side of a spatula or spoon. If it sticks together, you have added enough water. If not, add more, a T. at a time and mix until it just holds together.
    2. Divide dough in half. Press into round flat disks. Wrap tightly in plastic and refrigerate for 30 min. before rolling out.
    YEILD: 2 crusts for a 9" pie.
