Dark Chocolate Bundt Cake

    Dark Chocolate Bundt Cake

    1-1/2 cups flour
    2 cups sugar
    3/4 cup cocoa
    1-1/2 tsp. baking soda
    1-1/2 tsp. baking powder
    1 tsp. salt
    2 eggs
    1 cup milk
    1/2 cup vegetable oil
    2 tsp. vanilla
    1 cup boiling water
    1 cup grated semisweet baking chocolate (I suppose chocolate chips would do, but I'm not positive)
    1/2 cup finely chopped pecans (optional -- I left them out)

    Preheat the oven to 350. Combine the flour, sugar, cocoa, baking soda, baking powder, and salt. Mix well, then add the eggs, milk, oil, and vanilla. Beat with an electric mixer on medium speed just until mixed, no more than 2 minutes. Stir in the boiling water by hand, then stir in the grated chocolate and nuts. The batter is very thin. Pour into a greased bundt pan and bake for 40 minutes, or until a tester inserted in the center comes out clean. Cool for 10 minutes in the pan, then remove and continue cooling. Dust with powdered sugar, if desired.
