Crawfish Etoufee

    2 lbs. cooked, peeled crawfish (or shrimp)
    1/4 cup butter, melted
    3 TBSP flour
    1 cup chopped onions
    1/2 cup chopped celery
    1/4 cup chopped green pepper
    2 TBSP chopped parsley
    1 clove garlic, minced
    1/2 cup water
    1 TBSP lemon juice
    1/4 tsp salt
    1/4 tsp cayenne pepper
    3 cups cooked rice

    In a skillet, combine butter and flour. Add onions, celery, green pepper, parsley and garlic. Cook over medium, stirring constantly til tender. Add water gradually and continue to stir; cook til thick.

    Stir in craw fish, lemon juice, salt and pepper; heat thoroughly.

    Serve over rice.
