Cranberry Fool

    A fool is an English dessert made with pureed fruit. The name comes from the French verb "fouler" (to crush). It is good with raspberries, strawberries, or blueberries.

    6 Servings
    2 cups heavy cream
    1 tablespoon sugar
    1/4 cup orange juice
    1-1/2 cups whole berry cranberry sauce

    Whip the cream in a large bowl until it starts to thicken. Add the sugar and beat until it thickens more. Add the orange juice and continue beating until peaks form. Place the cranberry sauce in a large bowl and fold the cream into the cranberries gently. Don't overfold--the mixture should be pink
    and white.

    Note: For a low fat version, substitute whipped egg whites for the cream.
