Coffee Nut Cookies

3 oz Baker's chocolate, chopped coarse
18 oz chocolate chips
1 sticks plus 1 tbls butter, softened
3 large eggs
1 cup plus 2 tbls sugar
1 tbls instant coffee
1 tbls vanilla
6 tbls flour
3/4 tsp salt
1/2 tsp baking powder
1 1/2 cups walnuts
1 1/2 cups pecans
Preheat oven to 325F. In a double boiler melt Baker's chocolate, 1/2 chocolate chips, and butter, stirring occasionally. Remove top of double boiler from heat.
With a mixer beat eggs and sugar til light and fluffy. Add coffee, vanilla, and chocolate mixture, beat til smooth.
In a small bowl whisk flour, baking powder, and salt. Add to chocolate mixture, beat til just combined. Stir in remaining chocolate chips and nuts til well mixed.
Scoop out 1/2 cups of dough, arrange 3 inches apart on ungreased baking sheets. Bake in batches in middle of oven 25 minutes, or til tops begin to crack. Cool on a rack.
Makes twelve big cookies.
