Coconut Tea Cake

    Coconut Tea Cake

    6 large eggs, separated
    1 cup unsalted butter
    2 7-oz pgs. sweetened coconut flakes
    1-3/4 cup flour

    Preheat oven to 350. Beat egg whites until stiff but not dry. Set aside. Beat together the butter and coconut. Add one egg yolk at a time, beating well after each addition. Stir in flour. Fold egg whites into butter and coconut mixture until just combined. Scrape batter into a lightly greased 10-inch tube pan. Bake until a toothpick inserted in center of cake comes out clean, about 25-35 minutes. Remove from oven, cool in pan 10 minutes and unmold to cool on a wire rack. Garnish with coconut.
