Coconut Macaroons

    2 egg whites
    1/8 tsp. salt
    1/2 cup sugar
    1 tsp. vanilla
    2 cups flaked coconut, packed

    Grease and flour large cookie sheet. Beat egg whites until foamy. Add salt and beat until soft peaks are formed. Add sugar 1 tablespoon at a time and beat until very stiff. Fold in extract and coconut. Drop by teaspoonfuls one inch apart on cookie sheet. Dip fingers in cold water and smooth mounds. Bake 20 minutes or until very light brown at 300 degrees F. Cool on sheet slightly before removing.

    I've tried doubling this recipe but it doesn't work as well. It's best to make each recipe separately.
