Chocolate Dipped Walnut Crescents

Makes 5 dozen
1 cup walnut pieces
2 cups confectioner’s sugar
1 cup unsalted butter, softened
1 ½ teaspoon vanilla extract
2 cups all purpose flour
¼ teaspoon salt
1 cup semisweet, or milk chocolate chips,
1 tablespoon solid vegetable shortening
1. In a food processor finely grind nuts, and ¼ cup sugar. In a large bowl, on low speed, beat butter until creamy. Add ½ cup sugar; beat until fluffy. Beat in nut mixture, vanilla, then flour, salt. Chill 1 hour.
2. Preheat oven to 350 degrees. With floured hands, roll level 1 ½ teaspoons of dough into 3 inch ropes; shape into crescents. Place 2 inches apart on ungreased baking sheets. Bake 15 to 17 minutes, until lightly browned on bottoms and edges. Transfer to racks. Sift remaining 1 ¼ cups confectioners’ sugar onto plate. Roll warm cookies in sugar.
3. In a 2 cup glass measure, microwave chocolate and shortening on high 1 ½ minutes; stir to blend. Brush sugar off one end of crescents; dip in melted chocolate. Place on waxed paper to set. Store in airtight container at cool room temperature up to 2 weeks.
