Chicken in the Pot with Matzo Balls

    Serves 8
    1 3 lb. whl chicken
    2 qts chicken soup or broth
    3 lg carrots, scraped, cut 1" strips
    4 eggs, lightly beaten
    2 stalks celery, 1" strips
    1/2 c water or seltzer
    1 lg turnip, pld,1 inch strips
    1/4 c + 2 Tbs. Oil(chickfat)
    3 parsnips, scraped, 1" strips
    1 c matzo meal
    2 c leek, crsly chpd, includ some green

    Place first 7 ingred in pot just lg enough to cover chicken with liquid. Bring to boil over hi heat. Reduce heat to low, partially cover, simmer 1 hr, skimming film from top. Mix eggs, water, oil, salt and pepper to taste in a bowl. Mix thoroughly. Gradually stir in matzo meal. Cover and refrigerate1 hour. Bring a lg pot of water to a boil. Using about 2 Tbs for each ball, form matzo balls with moistened palms. Drop balls into boiling water. Cover, simmer abt 30 min. Carve chicken into portions. Put some soup and vegetables, a matzo ball or two, and a piece of chicken in each individual warmed soup bowl.

    Per serving: calories 629, fat 24.8g, 36% calories from fat, cholesterol 264mg, protein 55.6g, carbohydrates 44.9g, fiber 5.7g, sodium 1221mg.
