3 or 4 chicken breasts, cooked and chopped
2 c. chicken broth (from cooking the abovementioned chicken breasts)
1/2 stick butter or margarine
1 heaping T. cornstarch
1 c. sour cream
1 large onion chopped
1 large green pepper chopped
large package of shredded cheese....mexican style is what I use.
extra cheese if desired
Boil the chicken (I do it in the microwave) in enough water so that you will have 2 c. broth for making the
sauce. Set chicken aside to cool and then chop the meat.
For the sauce....melt butter in heavy saucepan..medium heat..stir in cornstarch........stir in chicken
broth..........bring to a full boil and stir until it starts to thicken a bit. Remove from heat and stir in sour cream.
Add pepper, salt and chili powder to taste.
Saute onion and pepper in a bit of oil.............cool. Stir into chopped chicken.
Lay 10 flour tortillas out on countertop. Put chicken/pepper/onion mixture in the middle of each along with a
generous amount of cheese.
Put a bit of the sauce in the bottom of baking dishes......when I make these I use a 9x13 AND an 8x8 as the
one dish doesn't adequately hold them all.
Roll tortilla and place seam side down in baking dish. Pour some sauce over. If desired add more grated
cheese on top and then pour the rest of the sauce over. I put MORE cheese on top after the final sauce and
also a few chopped green and/or red peppers for presentation purposes.
Cover and bake about 30--35 minutes at 350 degrees.
