12 small corn tortillas, cut into 3/4 strips
2 tablespoons veg oil
1 small onion, chopped
1 small jalapeno, seeded & minced
4 garlic cloves, chopped
1 can seasoned diced tomatoes, undrained
1 cup grated monterey jack cheese
2 cups cooked chicken
Preheat oven to 400. Toss tortilla strips in 1 tablespoon of oil. Season with salt. Toast in oven for 25 minutes tossing occasionally. In a large saucepan, in 1 tablespoon if oil, saute the onion, jalapeno & garlic. Add diced tomatoes. Cook about 3-4 minutes. In a lareg oven proof baking dish place the toasted chips, then layer on chicken, then vegetables topped with cheese. Bake 5 minutes until cheese is melted.
