Cheese Blintzes with Berries

    4 egg whites
    1 cup milk
    dash of salt
    1 tbs sugar
    1/2 cup wheat germ
    1/2 cup flour
    2 tbs melted butter


    1 cup ricotta cheese
    1/2 cup cream cheese
    1/4 cup sour cream
    1/4 cup wheat germ
    2 tbs sugar
    1 tsp vanilla
    1 tbs melted butter
    2 cups in season berries-in a pinch use frozen
    extra sour cream

    Make crepes by putting all crepe ingredients in blender or food processor. Blend til smooth. Pour
    into a bowl and let sit a few minutes to thicken up. Heat omelette pan, grease lightly. For each crepe, pour about 1/4 cup batter into hot pan. Tilt pan to coat with thin layer. Cook til top looks dry. Turn and cook about 20 seconds longer.
    Stack between sheets of wax paper. Set oven at 400F. Spray lasagne pan with Pam. Mix ricotta cheese, cream cheese, sour cream, wheat germ, sugar and vanilla in a bowl. Put about 2 tbs filling in center of each crepe. Wrap like a burro. Put blintzes in pan, brush with butter. Bake 10 minutes or til heated through. Top each blintz with berries and a little sour cream, sprinkle with wheat germ.
