2 cups sifted flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 cup butter
1 cup brown sugar
4 eggs, separated
3 cups (1 1/2 lbs.) grated carrots
2 Tbs. cold water
1 Tbs. lemon juice
1/4 cup fine, dried bread crumbss
Mix and sift flour, baking powder, baking soda and salt. Cream butter; Add sugar gradually and continue creaming until light and fluffy. Add carrots and slightly beaten egg yolks and mix well. Add sifted dry ingredients and mix. Add water and lemon juice and mix. Fold in stiffly beaten egg whites. Sprinkle half of the crumbs on the bottom of a well-greased 6 1/2 cup ring mold or an 8x12in. glass pan. Spread carrot mixture carefully over crumbs; then top with remaining bread crumbs. Bake at 350 degrees about 30 min..
