Carrot Apple Squares

    2 cups all purpose flour
    2 teaspoons baking soda
    1/2 teaspoon ground cinnamon
    1/4 teaspoon salt
    1 cup chopped walnuts or pecans
    1-1/2 cup sugar
    1/2 cup (1 stick) unsalted butter, softened
    1 teaspoon vanilla
    2 eggs
    2 cups chopped, pared apples
    2 cups shredded carrots (3 large)
    vanilla ice cream

    Preheat oven to 350 degrees. Grease 13 x 9 x 2-inch baking pan. Combine flour, baking soda, cinnamon, salt and nuts in bowl. Using an electric
    mixer, combine sugar, butter and vanilla in a large bowl until smooth and fluffy. Add eggs; beat until fluffy. Stir in apple and carrots by hand.
    Add dry ingredients; stir just to blend. Mixture will be stiff. Scrape into prepared pan; shake to level. Bake for 15 minutes, then reduce oven
    temperature to 325 degrees. Bake 25 minutes or until a cake tester inserted in center comes out clean. Cool in pan on rack at least 30
    minutes. Cut into squares. Top with ice cream. Makes 12 squares.
