Calzones

    Use frozen bread dough - I like Rhodes the best.

    1 1/3 cup water
    1/2 tsp. oregano
    2 TBS. Olive Oil
    4 cups bread flour
    2/3 tsp. salt
    2 1/2 tsp. yeast

    When you prepare the frozen dough, knead in the oregano and about 1 Tbs. olive oil for a better tasting crust.

    Filling:

    2 C. Ricotta cheese
    1 cup grated parmesan
    1 cup grated mozzarella
    2 eggs, beaten
    1 1/3 tsp. parsley
    1 1/3 tsp. basil
    2/3 tsp. black pepper

    Optional additions:

    Pepperoni, onions or spinach (use 1 -2 small boxes frozen depending on taste.
    Thaw spinach, drain and squeeze out as much water as possible.)

    Mix all ingredients together thoroughly.

    Roll dough into 8 inch circles. Spread filling on half of the circle, leaving a border around for sealing edges.

    Fold unfilled side over and crimp edges with a fork or your fingers.

    Place on lightly greased baking pan. Let rise about 30 minutes.

    Brush with olive oil and bake in preheated 500 degree oven for 20 - 3o minutes or until puffed and golden brown.

    Makes 8 calzones.

    Serve with a good canned spaghetti sauce if desired.
