CRISPY LEMON FRIED CHICKEN

    Crispy Lemon Fried Chicken

    16 pieces of chicken
    3 1/2 tsp. salt, divided
    juice of 1 lemon
    1 C. flour
    1 tsp. paprika
    1/8 tsp. pepper
    cooking oil
    2 T. water

    Place chicken in a large bowl and add 3 tsp. salt, lemon juice squeezed from the lemon and enough water to cover. Soak in refrigerator overnight. Drain thoroughly. In aplastic bag, put flour, paprika, pepper, and remaining salt. Toss chicken pieces in flour mixture and shake off excess. Heat about 1/2 inch oil in chicken fryer. When hot, carefully add chicken pieces and brown lightly on all sides, about 20 minutes. Reduce heat, add water, cover and cook till tender, about 20 minutes. Uncover and cook until chicken is crisp, about 10 minutes more. Serves 6-8.
