COMPANY'S COMING CHICKEN SALAD

    4 CHICKEN BREAST HALVES
    1 YELLOW ONION, SLICED
    SALT, TO TASTE
    BLACK PEPPER
    2 CELERY RIBS,DICED
    1 RED ONION,CHOPPED
    1 GREEN BELL PEPPER,DICED
    1 GARLIC CLOVE, MINCED
    6 BOILED EGGS, CHOPPED
    1 CUP SWEET PICKLE RELISH
    SALAD DRESSING
    RED PEPPER FLAKES

    PLACE CHICKEN AND YELLOW ONION IN LARGE POT WITH ENOUGH WATER TO COVER. SEASON WITH SALT AND PEPPER. BRING TO A BOIL AND COVER AND LOWER HEAT TO MEDIUM HIGH. COOK UNTIL CHICKEN IS DONE, ABOUT 30 MINUTES.REMOVE FROM HEAT AND LET COOL IN THE LIQUID. REMOVE AND DISCARD SKIN AND BONES, AND CUT THE MEAT INTO 3/4 INCH PIECES. COOL COMPLETELY.
    IN A LARGE BOWL, COMBINE CHICKEN, CELERY, RED ONION, GREEN PEPPER, GARLIC, EGGS, AND RELISH. GENLY STIR IN THE SALAD DRESSING, SEASONING WITH THE RED PEPPER FLAKES AND SOME MORE SALT AND PEPPER TO TASTE. COVER AND REFRIGERATE UNTIL CHILLED.
