    3-4 chicken breasts
    1 head lettuce (shredded)
    1/2 package miafun noodles
    3-6 green onions, sliced thin
    1 small package slivered almonds (roasted)
    1/4 cup white sesame seeds

    put chicken breasts in pan of water with about 6 slices of fresh ginger
    root. Bring water to a boil and turn down heat: cook for 20 minutes.
    drain. Cool in refrigerator and shred

    deep fry miafun noodles; drain and set aside.


    4 tablespoons sugar
    1 teaspoon salt
    1/2 teaspoon black pepper
    4 tablespoons vinegar (white is fine)

    1/2 cup salad oil
    1 teaspoon sesame oil

    combine first 4 ingredients and cook on stove on low heat until dissolved.
    Let cool to room temperature. add oils. Set aside combine ingredients for
    salad together in big bowl. add dressing just before serving.

    side note; once you put the dressing on salad you need to eat it or it will
    get soggy pretty quick. for a group of people or pot luck I put salad
    ingredients in seperate containers and let people help themselves and make a
    double batch of dressing and put in a water bottle with a pop top. so that
    way you can save the leftovers (because they are well worth saving) this
    salad is great in the summer.
