Butterscotch Pie

    BUTTERSCOTCH PIE

    4 tablespoons butter
    1 cup [dark] brown sugar
    2 cups scalded milk
    5 tablespoons cornstarch
    4 tablespoons water
    2 egg yolks
    1 baked 9-inch pie shell

    MERINGUE

    2 egg whites
    4 tablespoons granulated sugar

    Cook butter and sugar in skillet until thick and brown, stirring
    constantly. Stir in milk. Mix the cornstarch and water smooth, add
    slightly beaten egg yolks. Add to first mixture and cook in double
    boiler until thick and creamy; stir constantly. Cool and
    pour into baked pie shell. Cover with meringue: beat egg whites until
    foamy; Add 4 tablespoons sugar gradually, beating until mixture
    stands in peaks. Pile lightly on pie filling. Bake in preheated 350.
    degree F. oven 15 minutes or until meringue is delicately browned.

    Serves 6 to 8.

    NOTE: When cutting meringue pie, dip knife in cold water to prevent
    sticking.
