Butterflied Garlic Lamb with Potatoes

10 lge old potatoes
30g (1oz) butter
1 tbls olive oil
6 cloves garlic, crushed
2 tbls chopped fresh thyme
2 tbls chopped fresh rosemary
2 tsp seasoned pepper
1 tbls olive oil, extra
2kg leg of lamb, butterflied
Peel potatoes, cut into 3cm (1.5") chunks. Heat butter and oil in baking dish, add potatoes, turn to coat with butter mixture.
Combine garlic, herbs, pepper and extra oil in bowl. Rub half the garlic mixture on cut side of lamb, place lamb over potatoes, fat side up. Rub remaining garlic mixture over fat side of lamb. Bake, uncovered, in mod hot oven about 50mins or until lamb is tender.
Remove lamb from dish, keep warm. Drain away excess juice. Return potatoes to oven, bake in very hot oven about 20mins until potatoes are browned and crisp. Serve sliced lamb with potatoes.
