From MMMMiami--Tempting Tropical Tastes for Home Cooks Everywhere by Carole Kotkin and Kathy Martin
1-1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter
4 ounces semi-sweet chocolate, chopped
1-1/3 cups sugar
3 large eggs, lightly beaten
1 teaspoon vanilla
1/2 cup chopped pecans or walnuts
1/2 cup semisweet chocolate chips
8 ounces semisweet chocolate, chopped
2 tablespoons rum
Preheat oven to 350 degres. Butter a 10-inch springform pan. Mix flour,baking powder and salt in a small bowl. Melt butter with 4 ounces
chocolate in heavy small saucepan over low heat, stirring until smooth or melt in microwave covered at 100% power for 2 minutes. Transfer mixture to
a large bowl. Add sugar and stir for 2 minutes. Add eggs and vanilla.
Using electric mixer, beat batter 2 minutes. Mix in nuts and chocolate chips. Add dry ingredients and stir to combine. Pour batter into prepared
pan. Bake until top looks dry and edges begin to pull away from side of pan, about 45 minutes. Cool. Melt chocolate in top of a double boiler over
barely simmering water or melt in microwave covered at 100% power for 2-1/2 minutes. Add rum and stir until smooth. Pour glaze over cake and spread
evenly. Let stand until glaze sets. Release pan sides. Cut into wedges and serve.
