Braided Sweet Potato Bread

    1 pkg yeast
    1/4 cup lukewarm water
    1/4 cup oil
    1 tsp thyme
    1 1/2 cups mashed sweet potato
    3 tablespoons honey
    1 cup milk
    3 cups whole wheat flour
    1 cup white flour
    1/2 cup cornmeal
    1 1/2 tsp salt
    milk to brush tops of leaves

    Mix yeast and water and let stand for 10 minutes. Stir in oil and thyme, then sweet potato, honey, and milk. Stir til smooth.

    In another bowl, mix flours, cornmeal, and salt. Make a well in the center and pour in the wet mixture. Work together to make a dough. Turn out on a floured board and knead for 8 to 10 minutes, adding extra flour til dough isn't sticky. Put in a clean bowl and cover with a tea towel. Let rise for 1 1/2 hours, or til double.

    Punch down and turn back out on board. Divide into six pieces. Roll each in a long coil. To make loaf, braid three coils and pinch ends together. Put on a floured baking sheet, cover with a tea towel, and let rise til double, about 1 hour. Brush the tops with milk. Bake in a preheated 350 degree oven for 40 to 50 minutes, or til the tops are golden and the leaves sound hollow.
