Black Bean Dip

    1/2 cup chopped green onions
    1 tsp minced garlic
    1 Tbls olive oil
    2 cans black beans (rinsed)
    1 medium chopped tomato
    1 cup salsa
    1 cup cheese
    salt to taste
    (chili powder or a hot pepper)

    Saute onion and garlic in olive oil. Mix together tomato and salsa. Add onion and garlic. Gently mix in beans. Fold in shredded cheese. Add salt to taste. If you like it hot add chili powder or a hot pepper. This recipe is very forgiving. Add or take out whatever you like - it still tastes great. Serve with tortilla chips.
