Bill's Red Snapper w/Shrimp Stuffing

2 good sized fillets; wash and rub your preferred seasoning inside and out and stuff with the following stuffiing and fasten together. Brush fish with butter; bake @ 350 F for about 40 minutes or until fish flakes easily with a fork.
STUFFING: 1/4 cup chopped celery, 2 tablespoons chopped onion, 2 tbs butter, 3 slices cooked bacon crumbled, 1 cup soft breadcrumbs, 1/2 cup cooked, chopped shrimp, 1 egg, salt and pepper. Saute celery and onion in butter until soft. Add remaining ingredients and mix well.
