Betty Child's Crab Cakes

    1 pound crab meat
    1 or 2 eggs
    2 Tbsp mayonnaise
    1 Tbsp horseradish mustard
    1/4 tsp salt
    1/8 tsp pepper
    dash of Tabasco
    1 Tbsp chopped parsley
    cracker crumbs

    Combine all ingredients except cracker crumbs and mix lightly together. Do not pack firmly but allow mixture to be light and spongy. Cover cakes with crumbs and fry in deep fat just until golden brown. Remove from hot fat immediately. Drain on paper towels, serve hot.
