Beef and Eggplant Pasta

1 1/2 cups penne pasta (or whatever)
1 1/2 lbs ground beef
1/2 cup onion, chopped
1 1/2 tsp salt
1 tsp Italian seasoning
1/4 tsp pepper
1 small eggplant, peeled and cubed
1 cup sour cream
1/4 cup pimento, chopped
2 cups Cheddar cheese, shredded
Heat oven to 350F. Cook pasta and drain. While pasta is cooking, fry meat and onion til meat is brown. Drain off fat. Stir in salt, Italian seasoning, pepper, pasta, eggplant, sour cream, pimento and 1 cup of cheese. Turn into a casserole. Sprinkle with remaining cheese. Bake uncovered til the eggplant is tender, about 45 to 50 minutes. Serve hot.
