Beef Enchiladas

    Sauce:
    Prepare Lawry's enchilada sauce mix according to package directions, using tomato paste and 3 cups water.
    Each recipe uses 8 corn tortillas.

    Filling:
    Combine all ingredients except 3/4 cup cheese used for topping.

    Ingredients for filling;
    1 pound beef, browned, fat drained
    1 teaspoon lawry's seasond salt
    2 1/2 cups grated Monterey jack or Cheddar cheese
    1 can sliced ripe olives

    To Assemble:
    Pour 1/2 cup prepared enchilada sauce into a 12x8x2" baking dish. Dip each tortilla into enchilada sauce. Place about 1/2 cup filling in center of each tortilla. Fold sides over the filling;place in dish,seam side down. Pour remaining sauce over enchiladas, top with reserver cheese. Bake in 350 oven 20 minutes. Sour cream and olives can be used as garnish.
