Goes well with grilled vegetables. Cut the pineapple in half, lengthwise, or cook whole.
One 3-pound pineapple
Preheat the oven to 350 degrees F. Cut top off pineapple and discard.
Place the pineapple whole or cut-side down (if you cut it in half) on a baking sheet. Bake for 45 to 60 minutes (until soft and fragrant).
Cut into serving-sized wedges. Serve warm.
