Apricot Pineapple Cheese Delight

2 small pkgs orange jello (or 1 large pkg)
1 29oz can crushed pineapple
1 29oz can apricots finely chopped
1 cup combined juice
3/4 cup miniature marshmellows
2 cups boiling water
Drain and chill fruit, reserve juice
Desolve jello in boiling water, add cup of fruit juice
Chill until slightly congealed, fold in fruit and marshmellows. pour into cold water rinsed 9x13 pyrex dish. Chill until firm.
FRUIT CHEESE TOPPING
1 egg slightly beaten
1/2 cup sugar
1 cup whipping cream
3/4 cup grated tillamook cheese
1 cup apricot/pineapple juice
Combine sugar and flour, blend in slightly beaten egg. Gradually stir in juice,cook over low heat until thickened stirring constantly. Remove from heat,stir in butter. COOL then fold in whipped cream. Spread on top of jello, sprinkle grated cheese over top.
