Apple Pie Filling

    4 1/2 cup sugar 1t salt 1c cornstarch 1/4t nutmeg 2t cinnamon
    Mix dry together
    Stir into 10 cups water-cook and stir til thick and bubbly
    add 3T lemon juice 3 drops yellow food coloring

    Peel,core, and slice 15lbs of apples place in saline water
    pack apples in jars about 1' from top then pour liquid in to 1/2' of top
    take a knife down sides to let air bubbles escape and add more liquid if needed

    wipe rims and twist on lids and hot water bath for 20 minutes
    makes 8 qts

    for French apple add raisins and 1t vanilla to each quart
