Amish Soft Ginger Cookies

    6 to 8 cups flour
    3/4 tsp. salt
    1/2 tsp. cinnamon
    2 tbsp. powdered ginger
    1 cup lard
    1 cup sugar
    1 egg
    2 cups dark baking molasses
    2 tbsp. vinegar
    1 cup boiling water
    4 tsp. soda

    Sift 6 cups flour with salt and spices. Cream lard and sugar; add the egg. Beat until light. Add molasses and vinegar, then dry ingredients and soda dissolved in boiling water. If necessary add more flour to make a soft dough. Drop by teaspoons on greased cookie sheet. Sprinkle with sugar. Bake 10 minute in a moderate oven 350 degrees.
