1 package (6oz)Apricot Jello
2 cups boiling water
1 Can (20oz) crushed pineapple (drained)
1 package (8oz) cream cheese, softened
1 can (15oz) Apricot halfs, drained and chopped
1/2 cup nuts, chopped
1 (8oz) carton of Cool Whip.
In a bowl dissolve jello in boiling water. Drain pineapple(reserve the joice). Add pineapple to Jello. Set aside. Beat cream cheese and pineapple juice until smooth. Stir inJello mixture and chill until partly set. Stirring once in awhile. Stir in apricots and nuts. Fold in Cool whip. Put in a 13X9 dish. Can top with nuts. Note: I have froze this and it was good.
