Sonesta Key Biscayne Chef helps you prepare diet recipes

It's the beginning of the year and a perfect time to start eating healthy. Use lean cuts of meat, poultry and fish. Cut meat, poultry and fish thin to increase size on your plate. Low fat cooking methods are: roasting, grilling, steaming and poaching.
Use acids for flavoring such as wines, vinegar's and citrus juices and use herbs and spices to replace salt.
Use nonfat cereal for coatings, nonfat dairy products and egg white substitutes for whole eggs. Soy products are good for fillers and as a substitute for higher fat foods such as beef or chicken.
I asked Tom Parlo, Executive Chef of the Sonesta Beach Resort, Key Biscayne for some of his healthy recipes for the new year and he gave me some terrific recipes. Would you believe you could make a healthy pizza? Well, Chef Pardo has given me a great recipe for a pizza using healthy ingredients like mushrooms, tofu, garlic, rosemary, thyme and a whole wheat pizza crust. He also provided me with recipes for a zesty and healthy Gazpacho soup and a tasty low fat mango salsa for tuna.
"These are the same recipes we serve to guests in our hotel and newly opened health spa," Pardo said.
Parlo's career spans over 25 years. He has worked under some of the top chefs in the country such as Gray Kunz of Lespinasse at the St. Regis Hotel in New York City and Gunter Seeger, of the Dining Room at the Ritz-Carlton Hotel Buckhead, Georgia.
Parlo credits these two chefs in giving him the experience and training to produce world class cuisine combining the freshest local ingredients with exacting cooking techniques. The chef is completing his eighth year at the Sonesta Beach Resort, Key Biscayne. The James Beard Foundation has named him one of the Great Hotel Chefs in America.
